Holiday Broccoli Salad

Don't wait to the last minute, it is best if you make the day before.
Holiday Broccoli Salad
Servings 6

Dressing:
1 Naval orange, half juiced (about 3 tablespoons), half peeled and cut into bite size
pieces for salad
1 lime, juiced (about 1 tablespoon)
1 teaspoon of honey
½ teaspoon ground cumin
Kosher salt to tase
2 tablespoons of olive oil
Whisk all ingredients together
Salad
1 cup of quinoa
1 head broccoli cut into florets, large stems removed
¼ cup fresh mint, basil, or parsley finely chopped
½ cup dried cherries or cranberries
Pomegranate – cut in 8ths along veins and immerge in large bowl of water to remove
seeds.
½ naval orange cut into bite size pieces
Toss all ingredients together and dress the salad.
Refrigerate for at least 8 hours.
When ready to service add the feta and nuts.
½ cup crumbled feta (optional)
¼ cup roasted nuts - pistachios, sunflower, almonds or your favorite
